Lunch Ideas

With each lunch, serve some fruit and veggies of choice.  I tell my kids if they want to have a cookie or treat afterward, finish your fruit and veggies.  I also let them choose the fruit and veggies.  No matter what, I always serve the F&V.  Whether they eat them all up or not, they still know how important they are.

Pita Pizza (Rice cheese, pineapple, sauce, and anything else you like)

Quesadilla (dip in salsa or guacamole)

Tuna Melt with rice cheese

Sandwich (Avocado, Rice cheese, Tofurky or turkey, pickle, veganeise, mustard)

PB&J Sandwich (I use Almond butter for my peanut butter)

Healthy Mac & Cheese ( I like Amy’s organic)

Nachos, side salad, Avocado slices
